Caramel Corn Recipe







Original Recipe Yield 8 cups
Ingredients

  • 1 cup unpopped popcorn
  • 2 tablespoons vegetable oil
  • 3/4 cup packed brown sugar
  • 3/4 cup white sugar
  • 12 tablespoons butter
  • 6 tablespoons light corn syrup (1/4 cup + 2 tablespoons)
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 300 degrees F(150 degrees C).
  2. In a large pot, heat oil over high heat. Add the unpopped popcorn. Moving the pan constantly, pop the corn. Remove from heat, place in a large baking pan, and keep warm in the preheated oven. Discard unpopped kernels. I use air-popped popcorn instead.
  3. Mix sugar, butter, corn syrup, and salt into a large saucepan. Cook over medium heat, stirring until mixture starts to boil. Continue cooking for 5 minutes without stirring.
  4. Remove from heat. Stir in baking soda and vanilla. Pour over the popped popcorn. Stir popcorn until evenly coated. Bake for 25 to 30 minutes in the preheated oven, stirring every 10 minutes. Remove from pan and put into a large bowl to cool.
I got the original recipe from Allrecipes.com but doubled the recipe for the topping and changed some other things. It's also good with roasted nuts added.

January Meeting

Don't forget that our January meeting is the Big Reveal for our Challenge Quilts! Bring your Worm quilt or your Puzzler for everyone to see, admire, and vote for. Also, Ann Colter will present the program, so you know we'll be learning some exciting and helpful new things. For now, excuse me----I have some "challenging" quilting to finish.

Sewcial

 

Hey friends, I hope your holidays were great, if you are like me you could use a little "me" time, so I have planned a "Sewcial" for us on Tuesday, January 11, 2011. I will open the social hall at Mt. Zion at 8:30 am as usual and we will stay until...  This time let's concentrate on UFOs (unfinished objects) or whatever you would like to work on.  Lunch will be a covered dish lunch. Oh yeah! let's set up our "FREE" table in the back for all those things you cleaned out and don't want anymore. (For those of you who are new, this is where we bring in unwanted quilt related stuff & share it with your quilt friends.) I can hardly wait to see you all. GOD bless you and happy quilting!
