Old-Fashioned Fruit Compote from Taste of Home, Dec./Jan., 2011
1 can (20 oz.) pineapple chunks, undrained
1pkg. (18 oz.) pitted dried plums
1 can (15 1/4 oz.) sliced peaches, undrained
1 can (11 oz.) mandarin oranges, undrained
1 jar ( 10 oz.) maraschino cherries, drained
1 pkg. (6 oz.) dried apricots
2 pkg. (3 1/2 oz. each) dried blueberries (I used some I froze last summer)
1/2 cup golden raisins
4 lemon peel strips
1 cinnamon stick (3 in.)
In a Dutch oven, combine all ingredients. Bring to a boil. Reduce heat; cover and simmer for 50-60 minutes or until fruit is tender. Serve warm or at room temperature.
Note: Next time I do this recipe, I plan to shorten the cooking time a little.

ORIENTAL SALAD
1 pkg cole slaw
2 bunches chopped green onions
1 cup slivered almonds
1 cup sunflower seeds
2 pkgs. uncooked roman noodles crunched up
(chicken or roasted chicken)
DRESSING
1/2 cup sugar
1/2 cup vinegar
3/4 cup salad oil
Seasoning packages from the noodles
Mix together and pour dressing over salad at last minute.
